Sweet Potato Pone

Sweet Potato Pone

What you’ll need:

  • 2 1/2 cups raw grated sweet potatoes (yams)
  • 1 cup molasses
  • 2 eggs
  • 2 cups rich milk
  • 1 tablespoon melted butter
  • 1 teaspoon ground ginger or grated orange rind
  • 1 tablespoon brown sugar
  • 1/2 teaspoon powdered cinnamon

Instructions:

Mix ingredients and turn into a well-greased baking pan and bake about 45 minutes in a moderated oven, sprinkling the brown sugar and cinnamon over the top at the end of the first 25 minutes.
