Heat 2 tablespoon oil and sauté protein in a large saucepan over medium heat.
Stir in garlic, onion, and green bell pepper. Sauté until tender.
Stir in okra, diced tomato and it’s liquid, tomato paste, salt and pepper. Stir, occasionally for 40 minutes.
Heat 2 tablespoon of oil in a medium skillet over medium heat, stir occasionally, add flour , and cook for 2 to 5 minutes, until a golden brown thick ‘roux’ is formed.
Spoon the roux into the okra mixture, and continue to cook, stir occasionally, 5 to 10 minutes.
