Cook potatoes in boiling water to cover for 40 minutes, or until tender. Peel and quarter. Peel and core apple, halves, then cut each half crosswise into 1/2-inch slices. Halves pineapple slices. Reserve syrup from pineapple.
Arrange potatoes, apple, and pineapple in a broiler-proof 9-inch baking dish. Drizzle pineapple syrup over the dish, sprinkle with brown sugar, and broil 4 to 5 inches from heat for 15 minutes, or until apples are tender and starting to brown.
